Na základě vědeckých studií bylo potvrzeno, že mastné kyseliny vykazují značné antimikrobiální účinky. Cílem diplomové práce bylo testovat potenciální antibakteriální účinek kyseliny kaprylové. Tato mastná kyselina se vyskytuje v kozím, kravském a mateřském mléce a v mléce kokosových ořechů. Její antibakteriální aktivita byla testována na Escherichia coli, Salmonella typhimurium, Bacillus cereus, Bacillus subtilis, Serratia marcescens, Pseudomonas fluorescens, Micrococcus luteus a Staphylococcus aureus. |

The aim of this thesis is the aplication of caprylic acid on particular bacteria: Escherichia coli, Salmonella typhimurium, Bacillus cereus, Bacillus subtilis, Serratia marcescens, Pseudomonas fluorescens, Micrococcus luteus a Staphylococcus aureus. Caprylic acid is a natural 8-carbon fatty acid presented in breast, goat and bovine milk and is approved as GRAS by the US FDA. Furthermore, the evaluation of the antimicrobial activity and potential utilization of caprylic acid is included. |
