Cílem diplomové práce bylo monitorovat obsah biogenních aminů ve vybraných produktech živočišného původu z farmářské produkce na území České republiky a Slovenska. Jednotlivé vzorky farmářských výrobků byly zakoupeny z obchodní sítě v rámci regionálních farmářských trhů, nebo získány přímo na farmách. Celkem bylo k analýze předloženo 65 vzorků. Vzorky byly rozděleny do skupin na fermentované mléčné a fermentované masné výrobky. V teoretické části práce se uvádí základní charakteristika biogenních aminů, jejich vznik a vliv na lidský organismus. Stručně jsou popsány také technologické postupy vybraných produktů živočišného původu. Praktická část se zabývá stanovením obsahu osmi nejčastěji se vyskytujících biogenních aminů - tryptamin, fenylethylamin, kadaverin, putrescin,histamin, tyramin, spermin a spermidin. Ke stanovení byla použita iontově-výměnná chromatografie s fotometrickou detekcí. Analýzy vzorků byly provedeny přibližně v polovině doby minimální trvanlivosti, resp. použitelnosti. Vzorky byly také kultivačně vyšetřeny na některé druhy mikroorganismů, z nichž některé mohou produkovat biogenní aminy. Získané výsledky byly vyhodnoceny a v závěru práce jsou formulované závěry a doporučení. |

Purpose of this diploma is to monitor a content of biogenic amines in selected products of animal origin that are produced in the farms of Czech Republic and Slovakia. Samples of these farm products were purchased from the regional farmers' markets or straight from the farmers. Altogether 65 samples were analyzed. The samples were divided into fermented dairy product group and fermented meat product group. The theoretical part of this work presents basic characteristics of the biogenic amines, its origin and influence on human organism. Shortly it describes also technological processes of the selected products of animal origin. The practical part of this work examines content of the eight most frequent biogenic amines. To define this content the process of ion exchange chromatography with photometric detection was used. The sample analysis were realized approximately in the half of the expiry period. The samples were examined also in the respect of some microorganisms that are able to produce biogenic amines. Analysis showed presence of the biogenic amines within 47 samples, which means 72 % of the samples have positive findings on these substances. The most frequent was a combination of tyramin, putrescin and kadavedrin. Some samples were found also presence of spermine and histamine. The results obtained were evaluated and conclusions and some recommendations were stated in the final chapter. |
