Tato bakalářská práce se zabývá problematikou nápojů na bází tropického a subtropického ovoce, vymezuje pojmy jako ovocná šťáva, nektar a ovocný nápoj. V teoretické části je čtenář seznámen s vybranými druhy ovoce vhodných pro zpracování na ovocné šťávy, nektary a ovocné nápoje. Dále práce přináší pohled na hlavní rozdíly mezi šťávou a nektarem a stručně charakterizuje technologii výroby . Součástí praktické části práce je zmapování současného sortimentu značkových ovocných šťáv a nektarů z exotického ovoce v obchodních řetězcích působící v České republice. |

The Bachelor thesis deals with the topic of fruit based beverages, it defines terms such as a fruit juice, nectar and fruit drink. In the theoretical part, the reader is acquainted with selected fruits suitable for processing of fruit juices, nectars and fruit drinks. In addition thesis gives an overview of the main differences between juice and nectar and is a brief description of the production technology. The following practical part of the thesis is mapping of the current assortments of branded fruit juices and nectars from exotically fruits in retail chains operating in the Czech Republic. |
