Supramolekulární chemie zasahuje do mnohých odvětví, mimo jiné i do potravinářství, kde supramolekulární komplexy nacházejí mnoho uplatnění. Cílem této práce byla proto teoretická sumarizace poznatků o supramolekulární chemii a její využití, zejména v potravinářství. Další často využívanou metodou v praxi je HPLC (vysokoúčinná kapalinová chromatografie). Proto jak teoretická, tak praktická část práce je soustředěna na seznámení se s HPLC metodou a její využití při analýze supramolekulárních komplexů. |

Supramolecular chemistry has many applications in many industries, including the food industry, where supramolecular complexes find many applications. The aim of this thesis was therefore to summarize the theoretical knowledge of supramolecular chemistry and its applications, especially in the food industry. Another frequently used method in practice is HPLC (high performance liquid chromatography). Therefore, both the theoretical and practical part of the thesis is focused on the introduction to the HPLC method and its application in the analysis of supramolecular complexes. |
