Bakalářská práce se zabývá výskytem a stanovením biogenních aminů ve vybraných potravinách. V práci je popsána charakteristika biogenních aminů, jejich výskyt v potravinách, metody stanovení těchto aminů a navržení nejvhodnější metody jejich stanovení realizovatelné na Ústavu potravinářského inženýrství Univerzity Tomáše Bati ve Zlíně. Práce rovněž popisuje strukturu, vznik, význam a toxikologický účinek biogenních aminů na lidský organismus. |

There is described characteristic of biogenic amines, their occurrence in foods, methods determination of these amines and proposition of optimal method for their determination, which is feasible on Department of Food Engineering on Thomas Bata University in Zlin. There are also described structure, origin, significance and toxicological effect of biogenic amines on human organism. |
